Certo (pronounced chair-toe) is an Italian expression meaning “certainly.” In a word, it captures the life-affirming spirit of Italian hospitality.

Inspired by the folk traditions of Italian herbalists, we set out to make a New York amaro that captures the spirit of our environment in terms of ecology and human culture.
Over three years, we tested dozens of little-known herbs, roots, and flowers found native in the Hudson Valley region to perfect our recipe for Downstate Classic.
The result is a complex and peppery award-winning spirit made with 14 herbs and botanicals including angelica root, lemon balm, and organic wildflower honey.
